An overripe banana in the fruit bowl is a common sight in most kitchens. One minute it’s perfectly yellow, and the next it’s looking rather sad and unappealing. But what can we do with them, aside from making banana bread or throwing them away, adding to food waste?

Liz’s high-protein smoothie is a delicious way to start the day, and uses up any overripe bananas lingering in the kitchen. You can also uses Liz’s hack of keeping bananas in the freezer to avoid waste for any future recipe.

Simply peel and break the bananas into half or smaller chunks, and pop in a freezer bag before storing in the freezer. Not only does this avoid food waste, but it’s a great way to make your smoothies extra chilled.

If you haven’t already frozen your bananas and are in a hurry but would like to try this recipe, you can use regular bananas and blend with or pour over ice to chill.

The benefits of Liz’s high-protein smoothie recipe

Liz’s banana smoothie is high in protein, thanks to the protein powder. She’s a fan of casein protein or sometimes uses bone broth powder. Make sure to choose a good quality, plain protein powder to avoid unwanted ingredients such as sweeteners.

Ground almonds, milk and kefir all provide a healthy boost of fats, while the banana is rich in fibre for our good gut bugs and potassium. Potassium can be beneficial for our heart health.

The smoothie is also rich in probiotic goodness and calcium, and works out at around 24g protein per serving (depending on the protein powder used).

Ingredients

  • One large frozen banana
  • 1 scoop of protein powder
  • 500ml whole milk
  • Generous splash of kefir
  • 2 large tbsps ground almonds
  • 1 tsp vanilla essence

Method

  1. Peel the bananas and place in a bag to freeze. You might need to break large bananas in half or into a few pieces. Pop in the freezer for at least six hours to freeze.
  2. In a blender, add the protein powder, whole milk, kefir and the ground almonds.
  3. Add the frozen banana and vanilla essence.
  4. Whizz in the blender until smooth, serve in a glass and enjoy!
