Red cabbage, carrot and celery juice

It is thought that the various types of cabbage (red, green, Savoy, etc.) contain different patterns of glucosinolates, so eating a variety of these vegetables gives us the broadest range of benefits.
The rich-purple colour of red cabbage reflects its concentration of nutrients, including the amino acid glutamine, which is known to support the digestive tract. As with all cabbage juice, the flavour is quite strong, so juicing with cooling cucumber and citrusy lemon is a perfect match. Sip slowly, savouring each mouthful – this juice makes an excellent (super-healthy) meal-replacement drink.

Ingredients

  • 1/4 cucumber
  • 1 carrot
  • 1 stick celery
  • 1 small wedge red cabbage
  • 1/4 lemon
  • 1 cm piece fresh ginger root, peeled

Method

Juice all the ingredients, mix well and serve immediately.
