This barbecue chicken recipe was the brainchild of Shivi Ramoutar, whose recipes celebrate Caribbean cuisine with contemporary twists. The chicken is coated in a sweet, smoky sauce with a punch of rum and molasses sugar.
What better way to enjoy corn on the cob than fresh off the barbecue and slathered in butter? But this isn’t just any butter, it is mixed with fresh lime juice, smoky paprika, and toasted coconut for a Caribbean-inspired treat.
