Salty, spicy watermelon recipe for a summer’s day
This salty, spicy watermelon recipe by Shivi Ramoutar is the perfect treat to cool down with on a hot summer’s day. Packed with flavour, the smoky spice mix adds a grown up twist to the sweet, refreshing watermelon.
Ingredients
- 1 small ripe watermelon
- Coconut oil, melted for brushing
For the spice mix
- 1/2 tbsp cumin seeds
- 1/2 tsp fennel seeds
- 3/4 tbsp sea salt
- 1/4 tbsp cayenne pepper
- 3/4 tsp onion powder
- 3/4 tsp garlic powder
- Black pepper
- Zest of 1/4 lime, grated
Method
- For the spice mix, toast the cumin and fennel seeds for a couple of minutes in a dry pan on a low heat, shaking the pan regularly until the aroma of the spices hits you. Blitz the toasted seeds in a coffee grinder or processor until you have a smoothish powder. Add teh remaining ingredients and mix with a fork or small whisk, until well combined.
- Slice the watermelon into small wedges, brush with a little of the coconut oil and dip into the spice mix to serve.
