Asian salmon parcels with Tenderstem broccoli

This recipe for Asian salmon parcels with Tenderstem broccoli is perfect for both weeknight suppers and entertaining guests. It’s packed with flavour and ready in a matter of minutes.

Not only does this dish taste punchy and flavoursome, it’s also packed with health supporting ingredients too. Salmon is an incredibly nutritious fish, especially when it comes to omega 3s. These fatty acids are great for our bodies. They support healthy brain function, the heart, joints as well as our general wellbeing. Those who eat plenty of fish tend to be less at risk from heart disease. Fat is important in the makeup of our brain, with fatty acids being essential for our brain function too. Salmon is also an excellent source of high-quality protein, vitamins and minerals including potassium, selenium and vitamin B12.

It’s not just the salmon that’s nourishing our bodies. Broccoli is a great source of vegetable protein and is high in fibre too. Broccoli is especially good for our skin, containing vitamins A, C and E, which can protect against sun damage.

The chilli, garlic and ginger base of these Asian salmon parcels is more than just a flavour hit. The trio has immune system supporting properties too. Garlic can reduce our risks of cold and flu while ginger helps our digestive system to run smoothly.

Ingredients

  • 4cm of ginger, finely chopped
  • 1-2 red chillies, depending on spice preference
  • 2 cloves of garlic, finely chopped
  • 2 tbsp toasted sesame oil
  • 1 tbsp rice wine vinegar
  • 2 fillets of sustainably sourced salmon
  • 500g Tenderstem broccoli
  • Handful of coriander

Method

  1. Preheat the oven to 200°C/4o0°F/gas mark 6. Finely slice your ginger, chilli and garlic and add to a small bowl. Add the sesame oil and rice wine vinegar into the bowl and mix.
  2. Lay out two pieces of tinfoil large enough to wrap around the salmon fillets and place them in the middle of each sheet skin-side down. Pour half of your spice mix into each parcel. Wrap the tinfoil around the salmon and seal.
  3. Place your salmon parcels in the oven and bake for 12 minutes.
  4. While the salmon is in the oven, bring a pan of water to the boil. Place a colander on top and steam the broccoli for five minutes.
  5. Serve the salmon on top of the broccoli, pouring over any juices left in the parcel. Serve with a sprinkle of sesame seeds and chopped coriander.
