Passion fruit and thyme mocktini
This low-alcohol passion fruit and thyme mocktini is bursting with fresh, vibrant ﬂavours. If you do fancy a tipple, simply add a dash of martini.
- 2 martini glasses
- 4 passion fruits
- 2 tsp Angostura bitters
- 2 tsp honey
- Fresh thyme
- Sparkling water
- Martini (optional)
- Place a sieve over a jug, and spoon the juice and pulp out of the passion fruits into the sieve. With the back of a spoon, push the pulp through the sieve, letting the juice pass through, into the jug beneath.
- Add the Angostura bitters, honey, two sprigs of fresh thyme and a handful of ice, add a measure of martini if using, and give the mixture a good shake.
- Pour through a strainer into the martini glasses and top up with ﬁzzy water. Serve with half a passion fruit ﬂoating in the drink and a sprig of fresh thyme.
