Garlic breadstick recipe

This garlic breadstick recipe is a tasty treat that’s perfect for a bonfire night celebration. There’s nothing quite like toasted bread-on-a-stick for a chilly evening spent around a roaring fire.

Dip in delicious homemade garlic butter for a fun starter or snack. It’ll also keep your guests entertained while you prepare the rest of your feast.

We’ve used sticks, stripped of leaves and branches here to give an authentic, foraging feel to each garlic breadstick. You’ll need six to 12 clean sticks around 2cm thick.

Garlic is a good source of vitamins and minerals, including manganese, selenium and vitamin C. Research has suggested that garlic may help to slightly lower blood pressure, and it may also play a role in reducing the risk of heart attack.

Ingredients

  • 500g self-raising wholemeal flour
  • Pinch of salt
  • 3 tbsp sugar
  • 300-500ml water

For the garlic butter

  • 75g butter
  • 1 clove of garlic
  • 1 tbsp fresh parsley, chopped

Method

  1. Mix the flour, salt and sugar in a large bowl, then add half the water. Using a flat-bladed knife, mix the ingredients together. Continue adding water, a little at a time until you have a ragged dough. Then using your hands, bring it all together and knead until smooth. If it gets too sticky, add a little more flour.
  2. Split the dough into 12 balls and roll them into long, thin sausages. Twist each one several times around a stick, leaving a space between each curl so the dough has room to expand in the heat. You should end up with a long doughy spiral.
  3. Cook over glowing coals or embers (not flames), until the dough is golden brown and not rubbery.
  4. While the breadsticks are cooking, mix all the garlic butter ingredients together in a fireproof bowl and gently heat through until melted.
  5. As soon as the breadsticks are cool enough to handle, ease the spirals from the sticks and dip into the warm garlic butter to enjoy.
