Fresh summer slaw with apple and ginger

Enjoy the simple pleasures of outdoor eating with Liz’s fresh take on this family favourite. A classic summer coleslaw recipe is the perfect accompaniment to any BBQ or picnic.

This one has the delicious addition of yoghurt in the dressing recipe. Natural yoghurt is an easy way to add more beneficial gut bugs into your routine. Live yoghurt contains countless ‘friendly’ lactobacillus bacteria. This helps our digestive system run smoothly by aiding the breakdown of food, the absorption of nutrients and fighting against ‘unfriendly’ organisms that are often the cause of stomach upsets.

Ingredients

Slaw

  • 1 purple cabbage
  • 3 apples
  • 3 carrots
  • Raisins (optional)
  • 3 spring onions, finely sliced
  • Handful of fresh parsley, chopped
  • 1cm ginger, grated

Dressing

  • 100g plain yoghurt
  • 1 lemon, juice and zest
  • 3 garlic cloves, crushed

Method

  1. Grate or spiralize the cabbage, apple and carrots.
  2. Place into a large bowl and add the raisins, spring onions, parsley and ginger.
  3. Mix the dressing together, pour over the ingredients and toss well.
