Ingredients
For the base
- 150g ginger snap biscuits
- 60g coconut oil or butter
- 60g toasted hazelnuts
For the cheesecake
- 1 lemon, juice & zest
- 250g cream cheese or mascarpone
- 250g fromage frais
- 2cm raw ginger, peeled & grated
- 3 tbsp honey
- 100g mixed berries (to garnish)
