Wellbeing Wisdom

  • Onions are a surprisingly good source of vitamin C, which can help keep your immune system strong during the winter months
  • If you suffer from joint pain and arthritis, onions may help as they contain anti-inflammatory properties

Ingredients

  • 1kg white onions, peeled and finely sliced
  • 1 tbsp oil of choice
  • 4 stems of fresh thyme, leaves
  • 1 litre vegetable stock

To serve

  • 4tbsp crème fraîche

Method

  1. Add the onions and oil to a large pan, cook on the lowest heat with the lid on the pan, until the onions have reduced and are very soft – this could take up to an hour but this process is essential for the sweetness of the soup. Stir occasionally to stop the onions sticking.
  2. Add the thyme leaves, vegetable stock and half a litre of just-boiled water to the pan and turn the heat up. Bubble the soup for 5-10 minutes and serve with a 1 tbsp swirl of crème fraîche in each bowl.
