Light and healthy French onion soup
This low-calorie twist on a classic is both cleansing and replenishing – perfect for a light, healthy lunch with some toasted sourdough. This soup is suitable for freezing and has been written with batch-cooking in mind.

Ingredients
- 1kg white onions, peeled and finely sliced
- 1 tbsp oil of choice
- 4 stems of fresh thyme, leaves
- 1 litre vegetable stock
To serve
- 4tbsp crème fraîche
Method
- Add the onions and oil to a large pan, cook on the lowest heat with the lid on the pan, until the onions have reduced and are very soft – this could take up to an hour but this process is essential for the sweetness of the soup. Stir occasionally to stop the onions sticking.
- Add the thyme leaves, vegetable stock and half a litre of just-boiled water to the pan and turn the heat up. Bubble the soup for 5-10 minutes and serve with a 1 tbsp swirl of crème fraîche in each bowl.
