Light and healthy French onion soup

This low-calorie twist on a classic is both cleansing and replenishing – perfect for a light, healthy lunch with some toasted sourdough. This soup is suitable for freezing and has been written with batch-cooking in mind.

Ingredients

  • 1kg white onions, peeled and finely sliced
  • 1 tbsp oil of choice
  • 4 stems of fresh thyme, leaves
  • 1 litre vegetable stock

To serve

  • 4tbsp crème fraîche

Method

  1. Add the onions and oil to a large pan, cook on the lowest heat with the lid on the pan, until the onions have reduced and are very soft – this could take up to an hour but this process is essential for the sweetness of the soup. Stir occasionally to stop the onions sticking.
  2. Add the thyme leaves, vegetable stock and half a litre of just-boiled water to the pan and turn the heat up. Bubble the soup for 5-10 minutes and serve with a 1 tbsp swirl of crème fraîche in each bowl.
