Collagen fruit gummies recipe

Collagen is the most abundant protein in the body. We find it in our skin, bones, hair, nails, cartilage and tendons. It’s the ‘scaffolding’ that holds our tissue together and also helps to give structure and youthful elasticity to our skin.

Our body can make collagen from amino acids. These tiny collagen building blocks can be found in the proteins in our diets such as meat, eggs, fish and beans. It’s important to eat plenty of protein in later life as we get less and less efficient at converting amino acids into collagen over time. This process begins from the age of 25 onwards. We begin to lose collagen at a rate of 1.5% per year and may notice our skin begins to lose elasticity and tone.

Ingredients

    For raspberry gummies

    • 1 tbsp honey
    • 700g frozen raspberries
    • 200ml water
    • 8 tbsp grass-fed gelatine powder

    For apple lemon and turmeric gummies

    • 700g apples, peeled and chopped
    • 200ml water
    • 1 tbsp lemon juice
    • 1/2 tsp turmeric
    • 8 tbsp grass-fed gelatine powder
    • 1 tbsp of honey

    Method

    For the raspberry gummies:

    1. In a food processor, blitz your raspberries until smooth. Strain the purée through a metal sieve to ensure you don’t get a grainy texture.
    2. Add the purée, water and honey to a pan and lightly warm until the honey dissolves. Add the gelatine and slowly whisk until it combines.
    3. Pour the liquid into your chosen silicone mould or tray.
    4. Place in fridge and set for two hours, or until firm.
    5. Once firm, remove your gummies from the mould or cut then into squares from your tray. Keep in the fridge in a sealed jar for up to two weeks.

    For the apple, lemon and turmeric gummies:

    1. Quarter the apples to remove the stalk, core and seeds, then blitz in a food processor until smooth. Strain the purée through a metal sieve to ensure you don’t get a grainy texture.
    2. Add the purée, water, lemon, turmeric and honey to a pan and lightly warm until the honey dissolves. Add the gelatine and slowly whisk until it combines.
    3. Repeat steps 3-5 from the recipe above.
