Lunch is the perfect opportunity to refuel during a busy working day and it is a chance to reconnect with colleagues over nourishing, feel-good food. I’m a huge fan of the Scandinavian open sandwich, or Smørrebrød as they’re called in Denmark. Using just one slice of bread is a healthier alternative to the traditional British sandwich, and by adding a few colourful toppings, you can quickly create a beautiful sharing platter.
