As the weather gets colder, I long for wholesome, warming foods I can batch-cook to feed lots of hungry mouths! This curry is a real family favourite – bursting with the exotic flavours of South India. It’s also packed full of colourful veggies to help keep you and the family well-nourished during the winter months. I like to serve it with a mixture of brown and wild rice – which studies show contains 30 times more antioxidants than white rice.
