Cosy up with a good book or film and a bowl of these moreish roasted nuts, coated in honey, salt and fennel. Almonds are a great source of healthy fats, fibre, and vitamin E, which helps protect our cells from free radicals.

Method

  1. Preheat the oven to 180°C/350°F/gas mark 4. Melt the honey in a pan over a low heat and add in the almonds, fennel seeds and olive oil.
  2. Coat the almonds in the honey mixture before spreading on to a baking tray covered in baking parchment. Sprinkle over some salt before popping in the oven for eight to ten minutes until the nuts are golden and roasted, checking halfway through and shaking them around the tray.
  3. Take them out and let them cool before scooping into a bowl.
