Abel & Cole’s healthy ricotta cheesecake
- 3 blood oranges
- 3 green cardamom pods
- 1/2 tsp ground cinnamon
- 4 tsp honey
- 100g Greek style yoghurt
- 150g ricotta

- Finely grate the zest from 1 orange and scoop most of it into a mixing bowl (keep a pinch aside for garnishing). Set aside. Use a small, sharp knife to slice the skin and white pith off all the oranges. Hold the orange over a clean bowl and slice the segments out of the papery membranes. Squeeze the membranes over the bowl to squeeze in any juices. If there is any orange flesh still attached to the skins, squeeze that over the bowl, too.
- Crack open the cardamom pods and shake out the seeds into a pestle and mortar. Grind them, then scrape them into the bowl with the orange segments (no pestle and mortar? Just add the whole seeds to the oranges). Add ½ tsp cinnamon and 2 tsp honey. Gently stir to mix, then set aside.
- Spoon the yogurt and ricotta into the bowl with the orange zest. Add 2 tsp honey and stir to mix together.
- Spoon the ricotta mixture into 2 serving glasses, then top with the orange segments and some of their juice. Sprinkle over the reserved orange zest and a little extra cinnamon. You can drizzle over a little more honey too, if you like. Serve straight away.
